Basic Dough Recipe {عجين}

This dough recipe is good for any Lebanese appetizer/pies that requires dough. Including but not limited to meat pies, spinach pies, cheese pies, za’atar pies and even pizza!

Basic Dough Recipe

  • 3 cups flour (any variation of white/whole wheat flour will do!)
  • 1.5 cups warm water (100F)
  • 1 tbsp. quick rise yeast
  • 2 tsp. olive oil
  • 1 tsp. salt
  • 1 tsp. sugar


    1. First, warm the water to the right temperature.
    2. Add flour and salt to a mixing bowl, and mix together

3. Make a well in the centre of the flour

4. Pour the water in the well in the bowl

5. Sprinkle the yeast and sugar over the water surface

6. Add oil to well, let bowl sit for 10 minutes to allow yeast to activate

7. Start by using a spoon to mix the dry and wet ingredients together, and once incorporated, continue kneading with your hands

8. Knead the dough into a ball and cover with a thin layer of oil (so it doesn’t stick to the bowl while its rising)

9. Allow to rise for an hour- we like to put it in the oven using a pre-set bread proof temperature of 100C

10. Voila! Ready to use dough

Can be made using an electric mixer, following the same steps

Bake at 450 C for 8-10 minutes or until golden brown
