Meghli pudding is a light and satisfying Lebanese rice pudding that has a rich cinnamon flavor. As a bonus, this pudding is gluten-free and dairy free! Traditionally, Meghli is made with the birth of a baby to serve to guests, but more importantly, for the new mom to eat as the spices in the pudding coupled with the nuts that it is topped with are thought to help bring in a moms milk! This pudding’s name literally translates to ‘boil’ because of the length of time that is required for it to boil before it is ready to serve.  Of course around here we don’t wait for a newborn to enjoy Meghli. We love having it year round!

Prep Time: 5 min
Cook Time: 50- 60 min
Yield: 8- 10

Ingredients

  • 1 cup rice flour
  • 9 cups water
  • 1 tbsp cinnamon
  • 1 tsp caraway
  • 1 1/2 white sugar
  • Garnish
    • Shredded coconut
    • Sliced almonds
    • Ground pistachio
    • Raisins
    • Walnuts
    • Pine nuts

Directions

  1.  whisk all ingredients together in large pot. Once combined set pot on medium high heat and begin stirring.
  2. Once mixture begins to boil bring  down to medium heat and continue to constantly stir. Let cook for approximately 50 minutes. The mixture will thicken, reduce in volume and have some stretch to it.
  3. Remove from heat and immediately pour into small bowls for individual serving; top with a thin layer of shredded coconut.
  4. Once cooled cover and chill in fridge; continue with  remaining garnish when ready to serve.
