Fatayir Spinach Hack Pie {بيتزا السبانخ بالجبن}


If you’ve dined Lebanese then you known  laying  a simple feast is not our strength. I like to describe our prep style like this: plan a menu add a few more items, and when in doubt add a few more. Our mezza  (sides) are assorted and made in the perfect single serving size so you can enjoy one or a few. It is very impressive and makes for a very enjoyable dinning experience.

The only issue is .. one doesn’t always have the time nor the energy to pinch small individual pie or roll and cut tiny boats. As working moms of a growing families time is limited and tummies are always hungry (the struggle is real). So on those occasions when time is tight, and you’re rushing out the door to pick up or drop off or pick up again, you can take your spinach pies and make them into a spinach pizza.

Prep Time: 15 minutes
Cook Time: 10 minutes
Yield: 16 slices




  • 300 g chopped spinach
  • 2 medium onion
  • 1/2 tsp sumac
  • 3 tbsp olive oil
  • 1 medium lemon
  • 1/2 tsp pomegranate molasses
  • 1/2 tsp salt
  • 1/4 cup garlic sauce
  • 200 g shredded mozzarella


  1. Preheat oven to 500 F.
  2. Divide and role out dough to fit greased pan.
    For this recipe we used one full sheet pan to make one large pizza.
  3. Spread garlic sauce over dough; evenly sprinkle spinach mix over dough and cover with thin layer of mozzarella cheese.
  4. After 5 minutes of baking on bottom rack, check the pizza. carefully lift to check if bottom has browned.  If bottom has browned but top hasn’t move up to middle rack and broil for a few minutes.
  5. Slice and enjoy!
